1 teacup of flour
1 1/2 teaspoons of baking powder
1 egg
salt and pepper
3 tablespoons of milk
1/2 tin of sweetcorn
1 dessertspoon of oil (plus some more for fying)
Mix the dry ingredients is a bowl, then add in the egg and milk with the spoon of oil. Stir it hard, then add in the sweetcorn. Heat a small amount of oil in a frying pan over medium heat; drop in blobs of the mixture and cook until golden brown both sides, turning occasionally. This should take 10 minutes to cook.
Fritter Batter Recipe
1 cup of flour
1 egg
1/2 pint of milk
pinch of salt
Add the egg yolk into the flour and mix it up. Then gradually add in the milk and stir it to get all the lumps out, beating hard. Whisk the egg white and then fold it into the mixture just before using it. The stiff egg white is what makes the batter nice and crisp
Please note, although you can make batter in advance, the egg white will lose it's stiffness. So if you have some batter that's been lying around for a while, you can simply use it to make pancakes however it won't be any good for fritters.
When frying your fitters make sure that the oil is really hot - you should be able to see a faint smoke rising up. Also make sure that you stand well back from the pan when dropping the fritters into the oil so that you don't get splashed by the hot oil. The fritters are ready when the are a lovely golden-brown. If you are making a lot of fritters, make sure you allow the oil to heat up again between batches and don't try to cook too many all at once.
Apple Fritters Recipe
Peel and core 1 lb/500 g of cooking apples (for two) and cut into thin rings. Dip in sugar, then in batter (recipe above) and drop into the fat. Drain on a paper towel and sprinkle with sugar.
If you want to make pineapple or banana fritters the recipe is the same and you can use either tinned or fresh fruit.
Raisin Fritters Recipe
Mix raisins in with batter (but don't use all the batter until you see how far the raisins are going to go) and drop little dollops into the fat. Drain on paper and sprinkle with sugar.
Wiltshire Porkies
Little balls of sausage meat dipped in the batter and fried in deep fat. Very filling.
